Our Favorite Recipes
Being a work from home mom this is the recipe and schedule that works best for us
Sourdough (with time stamps)
8:30 am feed starter
1 pm prep bread
100 g starter
350 g of room temp water
whisk together
add 500g bread flour
5g of olive oil
combine
add 10g of salt and combine
2pm First set of stretch and folds
2:30pm cover 30 mins stretch and fold
3:00 pm cover 30 mins stretch and fold
-for 3/12-4 hours let double in size
7:30pm stretch out on floured surface(add inclusions now if you want to) try-folds and then roll up from the bottom top with flour and place in banniten bowl upside down in refrigerator over night
8am preheat oven with your dutch oven inside
place dough on parchment paper dust with flour and score
place parchment paper and dough inside of the dutch oven close lid turn oven down to 450 and bake for 20 min
THIS WILL BE VERY HOT PLEASE BE CAREFUL
remove lid and bake an additional 20 mins until golden brown
Let your bread rest for a few hours before cutting into it!
